Are you ready for another ‘diabetes beater’ recipe? Then try and enjoy this fruit cobbler! If you are diabetic, this recipe is a healthy choice and better for you. This cobbler does not have added sugar only good natural sugars1 from fruit and Xylitol2. Hopefully, phrases like ‘better for you’ and the word healthy, will not stop you from trying this treat. After many test pies, this one is ready for you. It is so exciting to add another dessert recipe to aid those who need to avoid glucose spiking sugar.
Cobbler for non-diabetics
Only one change will make this cobbler please any sweet tooth. Simply replace the Xylitol with cane sugar3 or your preferred sweetener. Now it is a satisfying treat for non-diabetics.
- 1 teaspoon 100% vanilla extract
- 4 large eggs
- 2 sticks unsalted butter
- ¼ cup V8 V-FUSION® Pomegranate Blueberry Juice (no sugar added) [optional]
- 2 very ripe bananas
- ½ cup pineapples
- 1 cup green seedless grapes
- ½ teaspoon allspice
- ¼ cup Xylosweet Xylitol (if you do not have diabetes use your favorite sweetener)
- 1 teaspoon ground fresh cinnamon
- ¼ cup 100% whole wheat flour
- 1 teaspoon corn starch
- ½ teaspoon of sea salt
- 2 Pillsbury® Refrigerated Pie Crust

Suggestion: Place all ingredients in one area before starting the preparations to make sure you do not leave anything out of the recipe.
- Preheat the oven to 350℉.
- Peel and mash the bananas.
- Use a fork to crush the pineapple or cut it into small chunks with a knife.
- Make sure you have removed the stems from the grapes (leave them whole).
- Mix the pineapple and grapes in a small bowl and set aside.
- Use ½ stick soft butter to grease the inside of a 5″ x 9″ (13x23cm) baking dish.
- Remove pie crusts from the refrigerator. Carefully unroll one crust and place in the baking dish and set aside. Leave the other crust rolled until later.
- In a small pot combine vanilla extract, eggs, V8 juice, butter, allspice, cinnamon, corn starch, bananas, wheat flour, and xylitol.
- Cook over medium heat and use a whisk, mixer, or hand blender to blend all items until the custard starts to thicken (5-8 minutes).
- It is a good idea to taste your custard to ensure it is sweet enough for you. Add more sweetener if needed. I suggest a teaspoon or tablespoon at a time.
- Remove from heat and let cool.
Putting your fruit cobbler together
- Pour ½ cup (or enough to cover the bottom; 1″ layer) of the “cooled” custard into the baking dish.
- Spoon ½ of the grape and pineapple mixture evenly into the baking dish.
- Pour ½ cup of the “cooled” custard over the fruit.
- Unroll the second crust. Cut a 5¾” x 9″ rectangle in the crust and set aside (this will be the top crust).
- Cut remaining crust into strips and place over the custard to form the middle crust.
- Add the rest of the custard and then the remaining fruit. Cover with the top crust.
- Crimp the edges to seal the top and bottom crust.
- Make 10-12 slits in the top crust to allow the release of steam.
- Put the cobbler in the oven and bake for 60-70 minutes or until the crust is golden brown.
TIP: Cover with aluminum foil for the first 50 minutes to prevent burning the edges of the crust.

Total time: up to 97 minutes
